The local farmers take immense pride in their harvest, allowing cherries to reach full ripeness before picking to maximize sweetness and complexity. Many believe that the right moment to harvest is guided by divine timing, a philosophy reflected in the patience and care they bring to their work. Some travel for up to two hours on horseback to deliver their cherries to the station. Anad at the heart of it all is Girum Assefa, whose meticulous management and processing help transform these carefully grown cherries into coffees of remarkable quality.
